My Favorite Summer Recipes: Strawberry Special

It's strawberry season! So, I've got a little special for you. :)



































It's strawberry time here in Sweden! :) When I started this series I was super excited for strawberry season and a lot of strawberry recipes I like to make and share with you. But unfortunately, the sun went missing somehow. It's more like April weather at the moment: rain, clouds in all shapes and sizes and just sometimes sweet sunny moments. So, it takes some time for the strawberries to turn red. Therefore, I've only two recipes for you in this post. But nevertheless they're super delicious and very easy to make! So, here we go! :)

First, I want to show you my "strawberry field" :) It's self-watering as you can see and the strawberries are protected by a net because we have a lot of birds here in the countryside :) (and everyone loves sweet strawberries ;) )





















Now let's start with the recipes!! :D

Strawberry Daiquiri with fresh strawberries








































Besides Mai Tai, this is one of my favorite cocktails! The original Strawberry Daiquiri is made with white rum, sugar syrup, strawberry syrup, lemon juice and frozen strawberries.
But if I have fresh strawberries I'd definately use them and hold the syrup. Also, I don't like white rum very much. So, here is how I make my strawberry daiquiri:

Ingredients:

4 cl brown rum
1/2 fresh lime
1 1/2 tsp. brown sugar
5 fresh strawberries
ice cubes and/or crushed ice

























Press out the juice of half a lime and add the sugar, so it can soak the juice and dissolve. Prepare the strawberries (wash, remove stems, cut in half). Put ice cubes, sweet lime juice, brown rum and strawberries into a blender. Mix it until you get a nice and smooth daiquiri :)



















Put some ice cubes into a cocktail glas and fill it up with your Strawberry Daiquiri! (or if you have an ice crusher, fill the glas with crushed ice and pour your daiquiri over the ice - wow! :) )

And that's it! :) A very nice and refreshing cocktail for hot summer evenings! :) Enjoy!






































Super easy Strawberry Cake


























The second recipe I want to show you is a super easy and fast to make Strawberry Cake. It's made with simple pound cake/stirred cake in the bottom (instead of traditional flan base which takes some more time and skill and is a bit harder to make, and of course it's summer and you want to do other things than being in the kitchen and bake complicated cakes ;) ) Ok, let's get started! :)

Ingredients:

Dough:
200g flour
115g sugar
10g vanilla sugar
a pinch of salt
100g margarine/ butter/ sunflower oil (which one you prefer for baking, I mostly use oil for baking)
1 tsp. baking powder
3 eggs
2 tbsp milk

Frosting:
5 tbsp sour cream
1 tbsp honey
some small strawberries

+ strawberries for topping :)

First, put all ingredients for the dough into a bowl and and mix everything for about 3 minutes until you get a smooth dough. When the dough starts to make some big bubbles while mixing, it means the baking powder (and the the dough) is ready. :)





















Put the dough into a springform and bake the it at 170°C for about 35 minutes.

























When the bottom of your cake is finished baking, place it on a grid to cool. Meanwhile, pick your strawberries and prepare them. (wash, remove stems, cut in half)




















Leave the very small ones for the frosting. After you prepared the strawberries, grab a big cup and add sour cream, honey and those small strawberries that are too small for the cake topping. Mix everything to make the frosting.
















When the cake is cooled down, you can put everything together. If your cake bottom has some bumps, like mine did, just take a bread knife and cut them off, so you get an even surface. Now simply distribute the frosting evenly onto the cake and top it with strawberries. (usually I like pack it up with strawberries, but you can only use as many strawberries as you have ;) but it's delicious anyway :) )
Put the finished cake in the fridge until your ready to serve it. And that's it! Very simple & super fast! :)
